Benoît Violier is the new Host of the famous Hotel de Ville in Crissier, in Switzerland, since beginning of April 2012. He is succeeding to Fredy Girardet and Philippe Rochat. On top of two wonderful Menus playing with the 5 senses, Benoît Violier kept original recipes from his Mentors, the previous residents of this great place. Benoît has had the privilege to work, between others, with Joël Robuchon, Benoît Guichard, Bruno Gricourt, Sylvain Knecht, Jean Phillipon, Frédéric Anton and Eric Bouchenoire. I felt obliged to share some pictures even if it is nowadays an established design in the Global world of Boat (not only with power but as well in sailing!!).
